I’ve just been to the butcher, Theobalds (McKanna Meats Ltd.), for some osso buco. My friend Oli introduced me to this butcher’s shop, over ten years ago. I wanted to cook some ox tail, which was hard to come by then. Theobalds have a fantastic range of offal, game and occasionally exotic meat, such as crocodile and zebra. Graham even managed to get me 30 sheep’s eye balls recently, for a photo shoot.
Theobalds sells meat wholesale to restaurants in London – Graham told me he goes to Smithfield Market at 5.30 each morning and because of this wholesale trade, ordinary customers benefit from cheap prices that buying in bulk allows. I noticed, this week, that osso buco is £10 per kilo, pheasants are £7 a brace and large gammon knuckles are £1.80. I even got a poussin for £1!
