Christmas Ham in mulled wine recipe:
Place your ham in a saucepan of cold water, bring it to the boil and then discard the water. Rinse the ham and put it into a cast iron casserole, along with a bottle of red wine, an apple, orange and lemon. Add a few cloves, a cinnamon stick, bay leaf and some grated nutmeg. Heat nearly to boiling, put the lid on the pan and cook slowly in a preheated oven, at 75º C, for 8 hours.
This is a normal mulled wine recipe, but I have omitted the sugar, which is unnecessary. The ham will taste and smell of mulled wine – just like Christmas!
