I bought sardines as an appetiser, again from Angel Fisheries. I wrote about them here, about a year ago, but they looked so good yesterday, that I couldn’t resist photographing them again. Sardines are rich in omega-3 fatty acids, which are very good for you.
These ones really remind me of the Sardinas de Chocolate, that you can buy in Spain. Chocolate sardines, in a box, wrapped in foil.
Use a pair of sharp scissors to snip out the contents of the stomachs. Season some flour with sea salt and cracked black pepper. Coat the sardines in the flour and fry them for a couple of minutes per side (until browned as above), in some very hot olive oil. These would work equally well on a barbecue, without the flour, coated with a little olive oil.
Serve sardines with a squeeze of fresh lemon and some home made allioli.
